Homemade Tomato Sauce

2 brown onions, roughly chopped ( optional)
1/2 a head of garlic (about 6-8 cloves) roughly chopped
50g olive oil
1kg tinned Roma tomatoes,
80g apple cider vinegar
100g tamari or gluten free soy sauce
100g Rapadura or coconut sugar or chopped dates
1/4 tsp ground allspice
1/4 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp ground ginger


Place onions and garlic in a saucepan with the oil
Add oil and saute until soft.

Add remaining ingredients

Cook for for 1 hour, then blend until you have your desired consistency.


You can play with the flavour, adding in one or more of the following if you like, and adjusting the sweetness (and sweetener) to taste:

fresh basil and/or oregano or chives
a little rosemary or thyme
black pepper
smoked paprika
a red chilli or chilli powder
a few sprigs fresh parsley

Note: In the fridge this will keep a few weeks. Or if you like you can put it into glass jars or bottles with screwtop lids that will seal well, then boil the sealed jars for 15-20 minutes to vacuum seal. This way you can keep it in the pantry indefinitely until opened. (After opening store in the fridge.)
