Sesame seed dukkah
100g sesame seeds
100grms pine nuts
1/2 teaspoon each of gr coriander, gr cumin, gr smoked paprika.
Pinch of chilli powder
Pinch of river salt
Combine pine nuts & sesame seeds in a dry pan on medium heat & roast until mix has started to colour, then quickly add your spices just for a minute until they are fragrant.
Pour mix into a blender & pulse until combined.. I like mine a little course but fine enough to roll my boiled eggs in & dip my rice paper rolls in. Plenty to do with this mix! Will post more recipes through the week.
Store in a airtight container in that fridge for up to 3 weeks.
